Hey there...This is my first post ever....m dead nervous.....was avoiding this since a month....decided 2 write it today....so plz don't b too harsh......would be grateful if u comment....suggestions r more than welcome...
When i woke up today, I didn't feel like getting out of my bed.....Whats better than ur cozy bed on a chilly winter morning??? I got my answer soon enough...the thought of a steaming bowl of sweet corn soup dragged me out of my bed......it was delicious....here is the recipe...
serves 4
INGREDIENTS:
sweet corn kernels 1 cup
onion (finely chopped) 1 medium
carrot(finely chopped) 1 small
capsicum(finely chopped) 1
Butter 1 tbsp
salt to taste
pepper to taste
Milk(for extra creaminess) 1 cup
soy sauce 2 tsp
ajinomoto(optional) 1/2 tsp
cornflour 1 tsp
water 4 cups + as reqired
spring onions(finely chopped) 1 tbsp
Melt butter in a saucepan. Add onion and saute till the raw smell disappears. Add carrot, capsicum and half the corn kernels and cook for about 5 mins. Set the vegetables aside.
Grind the rest of the corn kernels into a fine paste and pass through a sieve. Mix with 4 cups of water and boil in the same saucepan. Add the seasonings and the soy sauce and simmer for around 10 mins. Mix cornflour with water to make a paste and add to the soup with all other ingredients. Bring to a boil and adjust the consistency. Garnish with spring onions and serve.
FOR SWEET CORN EGG SOUP:
Break a egg directly in a steaming bowl of soup and stir it in.
or
Whisk a few eggs and add to the simmering bowl of soup in a steady stream.
FOR SWEET CORN CHICKEN SOUP:
Stir fry 50 gms of chicken breast in a tsp of oil or butter with a pinch of salt until done and add to the soup.
or
Boil the chicken in a cupful of water till cooked and add to the soup with the stock.
